Now, admittedly, I make sourdough all year long. But as soon as the weather starts to turn and the golden hue of autumn arrives, I shift from baking our regular weekly bread to everything pumpkin, apple, and spiced.

Tips for Baking Fall Sourdough
- Cooler fall temperatures can slow down sourdough’s fermentation process. Keep the dough in a warm spot or use a proofing box to help it rise consistently.
- If you have leftover apples, pumpkin puree, and spices from baking, use them in a fall simmer pot.
- If you want to swap all-purpose for fresh-milled flour, hard white, hard red, and rye add depth of flavor and extra nutrition to fall sourdough recipes.
- Most sourdough breads and rolls freeze beautifully. Let them cool completely, then store in a freezer-safe container for quick fall and holiday meals.

The recipes I’ve shared are tested, so you can use the ingredients as listed.
But if you are adapting a recipe to include pumpkin or apples, keep in mind that they add extra moisture.
Use a kitchen scale, add the pumpkin or apple gradually, and adjust with a little extra flour until the dough or batter is the right consistency. For apples, use shredded or diced fruit that’s been patted dry to avoid excess liquid.
Discard recipes are a great place to start. Recipes like apple cinnamon bread or apple cider donuts are great beginner recipes since they use discard and don’t require long fermentation.
You can add discard to any recipe! Stir sourdough discard directly into batters and doughs in place of part of the flour and liquid. In fall baking, it works well in quick recipes like donuts, brownies, cookies, or pumpkin bread, where it adds flavor without needing fermentation.
