Ingredients

unsalted butter

all-purpose flour

whole milk
warm (just warm enough to take the chill off)
A pinch of nutmeg

Instructions
Melt the butter in a heavy-bottomed saucepot over medium heat.

Add the flour to the melted butter. Whisk constantly until a thick paste begins to form. Cook until bubbly, about 1-2 minutes.

Slowly pour in the warm milk and whisk together until thoroughly combined.
1 1/4 cup whole milk
Bump up the heat to medium-high and bring to a boil. Whisk constantly to prevent burning, about 5 minutes.
Once the sauce has thickened, remove from heat. It is ready when the sauce coats the back of a spoon. It will thicken more as it cools.
Add a pinch of nutmeg. Season with salt and pepper to taste.
